This research was to study the effect of storage temperature on phenolic composition in wood vinegar by using Folin-Ciocalteu assay. Wood vinegar from bamboo was the specie with the highest phenolic content, followed by eucalyptus, white popinac and tamarind, respectively. A comparison of phenolic content from the same wood species with storage temperature differently, phenolic content from bamboo was no significant difference whereas phenolic content from tamarind was significant difference which temperature 4 C was the highest phenolic content, afterward 45 C and 35 C, respectively. The phenolic content from eucalyptus was significant difference at 4 C however not other temperature. The best phenolic content from eucalyptus was vinegar which storaged at 4 C, following 45 C and 35 C, respectively. In addition, at storage temperature 4 C, the phenolic content from white popinac was significant difference but not other temperature. Phenolic content from white popinac vinegar which storaged at 4 C was the highest, following 45 C and 35 C, respectively. The study of component, vinegars were extracted by Thin Layer Chromatography. In former research, the proper mobile phase system was the mixture of Hexane, CH3COOEt, and acetic acid at a ratio 8:2:0.5 v/v but our case can not be applied for the separation of vinegar. The mixture of mobile phase which proposed as a new ratio 8:2:1.5 v/v can be applied for the separation of vinegar but not good enough due to our vinegars obtain from different condition in harvest compare with former research.
